Botanical cocktails in a hidden Chelsea cellar
Thyme Bar descends into a historic Chelsea cellar once used as a 1920s gambling hall and speakeasy, a past that still shapes the atmosphere. Low ceilings and an enclosed layout create a sense of discovery, while the design integrates this history with a contemporary botanical aesthetic that feels entirely distinct.
At its core is a cocktail programme built around on-site micro-greenhouses, supplying fresh herbs and botanicals that define both flavour and presentation. Led by mixologist Samy Berdai, the approach is technical and considered, with an emphasis on texture, temperature and layered complexity.
A well-curated wine list—spanning natural wines, sake, Mediterranean labels and champagne—rounds out a bar that rewards curiosity and attention to detail.
